The Craft

"We are the music makers, and we are the dreamers of dreams."

I’m never inspired to make a beer that’s already made. I always get my inspiration from something around me; some kind of event or occasion, or some abstract idea that I think would be neat. Like with Alepocalypse. People ask, how the hell did you come up with that? I just had a friend who asked me to make him a beer that was as dark, complex, thick and alcoholic as possible. I added a couple ingredients for his personality. And people love it! I didn’t expect it to be that good. I surprise myself sometimes. Special occasion beers are especially fun because I can make the beer for one person’s specific taste. My pink ale (World’s Apart Ale) was something that I just wanted to try. To my knowledge, no one else has tried to put two yeasts together, and I thought it might be good. My IPA was an IPA made for those who don’t like IPAs, and that was a big success too. Sometimes I think of flavor combinations that are interesting, complex, and something that no one else has tried. I like working with ingredients that no one else has used, like green tea and other herbs. That’s why my beer is "a little bit out there.”
